During the "You Asked For It" segment of the @discovery.ca programme on the Discovery Channel 2002-03-05, it was mentioned that the water boils at 100 Celsius. The clarification 2002-03-06 stated that the maximum temperature of water is 100 Celsius before turning into steam at sea level and at normal air pressure (1 atm).
In a microwave oven, however, "superheating" occurs where the liquid water temperature is actually above the boiling point (100 Celsius), when the boiling is hindered by a lack of nucleation sites needed to form the bubbles. The superheated state is unstable, and liquids boil violently when they are disturbed. The superheating of water has been mentioned in the @discovery.ca programme several times over the years. A truly curious mind expects a clarification of the clarification in the programme soon.
