Another day, I boiled an ordinary 1-yolk egg. When the egg cooled down, I started to remove the egg shell. I peeled off a portion of egg white by accident, and a shiny surface showed up. I continued to peel egg white, and a mini-egg was revealed.
What is the mechanism of the egg white forming a layer with such a smooth interface? The topic would make a good Ph.D. Thesis. :-)
